The Aztecs introduced their fermented agave spirit, ‘pulque’ to Mexico followed by 16th century European colonists initiating distilling and Mezcal’s birth. Most famously, lighter Tequila expressions in cocktails are complemented by barrel-aged versions sipped neat.
